PASTA

What makes this recipe my favorite is that it is one of the first recipes that I learned to cook. I'd like to give my ex roommate all the credit. I loved observing how she created this colorful to the eyes and comforting to the palette dish. So easy and yet so tasty.



What you need to buy: Serves 2
  • 2 fist fulls of pasta (you could go in for interesting shapes or keep it simple)
  • 3-4 cups of milk 
  • Cheese (grated, Amul/Kraft/Any other)
  • 3 teaspoons corn starch
  • Pasta Sauce (American Garden/Ragu/Any other)
  • Broccoli (snapped into small flowerets, cut the floweret into two in case it is too big)
  • Baby corn (cut into wheels)
  • Capsicum (cut into strips)
  • Mushrooms (sliced)
  • 1 Onion (thinlsliced)
  • Salt to taste
  • 2 tablespoons vegetable oil 

What you need to do:
  1. Pour oil in a pan and heat it on a high flame. Once it's hot, maintain the high flame and throw in the sliced onions. Saute until they are just soft (not golden brown). After this add the remaining vegetables. Saute until the vegetables are slightly cooked but crisp. Add the pasta sauce and stir. Keep this aside. (The quantity of the vegetables depends on which ones you like best)
  2. Whilst step one in in progress, boil water (with a pinch of salt)  in a vessel. Once the boiling point is reached add the pasta. Give it a stir and cover the vessel.
  3. Whilst step two is in progress, pour milk in a sauce pan. Add the corn starch. Keep stirring to avoid lump formations. As the sauce thickens add the grated cheese. 
  4. Now spoon the boiled pasta directly from the boiling water into the white sauce. Add the sauted vegetables. Add salt to taste. Stir once.
Eat it like it is or grate some extra cheese onto your serving (cheese lovers, are you listening?), it will taste just as great. This dish not only works as dinner or lunch but it could also make for a great brunch on a lazy Sunday morning. Toh lunch ho, dinner ho ya nasta. Pamper your palette with pasta!

PS: This recipe could bring you love and so if I were you I wouldn't eat alone!

Tip me: Never add oil to pasta while you boil it. It interferes with the starch thus rendering the pasta incapable of holding onto the sauce (white/red).
